Proportionately they have more meat on their tail than our local crayfish. The Taste is a cross between snow crab and lobster . Delicious and very delicate . They present favorably and cook up bright cherry-red .
Red Claw crayfish are omnivorous, peaceful animals that do not require a high protein diet. It's recommended to put one male with 3 females for breeding purposes.
The males grow to over 14 inches and can weigh up to 600 grams or 1 1/3 pounds. The claws are reminiscent of a Maine Lobster. Males have bright red patches on the outside of their claws. The females have slightly subdued bluish-green coloring with no red patches. I have occasionally seen a large female with intense blue coloring.
The preferred breeding water temperature for these guys is 75 to 85° spawning...
